Homemade cheesecake is a unique, tender, very tasty, and inexpensive baking. Cheese for cheesecake is made from cream and yogurt.
For the basis
Semolina cookies - 200 g
Butter - 80 g
For the cheese layer
Yogurt - 500 g
Cream - 500 g
Eggs - 3 pcs
Sugar - 100 g
Starch - 2 tbsp

First of all, we need to make cheese. To do this, mix yogurt, cream, and in a bowl and put it in the refrigerator until it freezes completely.

Such foods freeze in about 6-8 hours. It is better to choose the ingredients used in the preparation of cheese from the fattest possible. Pour boiled water over the surface of the container to easily remove the frozen mixture from the container.

Put the frozen mass in a thick cloth or cheesecloth folded in 4-6 layers and hang the ends to thaw at room temperature. Place a bowl under it to drain the whey.
Dense and uniform cheese is formed.

You can keep such cheese in the refrigerator for about 4 days.
After the cheese is ready, you can start making the cheesecake.
Crush the cookies very finely.

Melt the butter and mix it into the biscuits.

Pour the resulting mixture into a mold and press firmly.

It is better than the diameter of the uniform is 20 centimeters.

We prepare the cheese layer. Add sugar, starch, and eggs to the cheese. Mix everything well. A uniform mass is formed without lumps.

We put the cheese mass in the form and straighten it. Bake the cheesecake in the oven for one hour at a temperature of 150-160ºC.

The top of the cheesecake should be slightly browned and the center should be a little runny like jelly.

The finished cheesecake will cool completely in the mold.

After the cheesecake is ready, cut it out of the mold and put it in a bowl. And keep it in the refrigerator for 4 hours. During this time, it will thicken and become tastier.
